Beef and chicken fajita meat, beans, rice, sour cream, fresh guacamole, chips and fire roasted tomato salsa, tortillas, shredded colby-jack cheese, and sliced jalapeños

Texas Barbecue Buffet

Barbequed beef brisket, or beef spare ribs, roasted chicken, borracho beans, potato salad, sliced bread, onions, pickles, jalapeños, chips

Prime Rib Buffet

Slow roasted prime rib, country-style red bliss mashed potatoes, your choice of vegetable, dinner rolls, au jus, horseradish sauce

Deli Buffet

Sliced turkey, ham, and roast beef cold cuts Sandwich sliced Cheddar, Swiss, and American cheeses Lettuce, sliced tomato, onion, and pickle spears White and wheat bread (Specialty breads available upon request)

Italian Buffet

Lasagna with meat sauce or Chicken Parmesan and Penne pasta with pesto cream sauce, or spaghetti con pomodoro Served with bread Add chicken to the penne pasta or meatballs to the spaghetti for additional cost. Add tossed salad of field greens, carrots & tomatoes with dressings for additional cost

Meatloaf Buffet

Southwest meatloaf, country-style red bliss mashed potatoes, sautéed green beans, brown gravy, fresh dinner rolls

Bacon Wrapped Filet Buffet

6 oz. bacon wrapped filet with mashed potatoes and green beans.

Spicy Plum Chicken Buffet

Char-grilled chicken breast with mildly spicy sweet Asian vinaigrette with mashed potatoes and green beans. Other sauces available

Beef Stroganoff Buffet

Beef tips with white gravy, egg noodles and sautéed vegetables

Salad Bar

Priced per person and based on number of guests Mixed salad greens, julienned carrots, diced eggs, cucumber, tomato, croutons, peppered bacon pieces, served with a variety of dressings.

Add fresh fruit display or vegetable crudités for additional cost per person.
